Sandy’s name has graced the roster of many fine establishments, including Executive Chef of Public Programs, California at the Culinary Institute of America (CIA), Thomas Keller’s Bouchon Bistro, Dean & Deluca, and Copia.

2020 Pinot Gris
Handley Cellars, Anderson Valley, CA
Maker: Randy Schock (winemaker), Lulu Handley (owner)
Composition: 100% Pinot Gris from Handley Estate vineyards in Anderson Valley.
Notes: White nectarine, guava, lemongrass – a dry, medium-bodied white wine.
About: Handley is known for minimal-intervention, food-friendly wines, and particularly for their California spin on Alsation white wines. Winemaker Randy calls this wine, “Golden Sun Drops” — think peach and apple blossom aromas with notes of guava, stone fruit, and bright acidity.
2020 Rosé of Grenache

Maker: Nicole Walsh, Ser Winery
Composition: 100% Rosé of Grenache from Loma del Rio Vineyard in Monterey.
Notes: Strawberry, watermelon, guava - "what pink might taste like."
About: Nicole is a Santa Cruz surfer making big waves in cool-climate wine, growing super rare grapes in rugged coastal terrain. She specializes in unique single-vineyard, single-varietal wines, like this very special Rosé of Grenache, that are a pure reflection of where they came from.

- 1 small shallot
- 1/2 cup dry white wine
- 2 tsp dried thyme leaves
- 1 tsp white peppercorns
- 2 cups heavy cream
- 5 lemons
- 1 cup English peas, fresh or frozen
- 1 pound sea scallops, U10 or 10/20 size
- Neutral high temp oil (such and grapeseed or canola), as needed
- ¼ cup fresh chopped parsley
- 2 Tbsp herbs of your choice, chopped (optional for garnish)
- Cutting board
- Liquid and dry measuring cups
- Measuring spoons
- Medium sauté pan
- Wooden spoon or silicone spatula
- Fine mesh strainer
- Mixing bowl
- Medium saucepan
- Spider or slotted spoon
- (2) Baking sheets or large plates
- Large cast iron skillet or sauté pan

Feel free to make modifications to the recipes we provide. Have fun with it!
A dry white wine is ideal for this recipe. If you do not have any on hand, the Maker Pinot Noir included in this kit will work just fine!
Try to purchase fresh, not frozen scallops for the most success with this dish. Frozen isn’t necessarily a deal breaker, but they will need to be fully defrosted in the refrigerator then, laid out on a paper towel lined baking sheet, to remove any excess moisture.
Ideal size: ask for U10, U15 or 10/20
